Summer Recipe – Easy Crunchie Ice-Cream

We just love our quickest ever ice-cream recipe. Fun to make with the kids and no additives. In this lovely hot weather you’ll have no worries about the ice-cream melting on the way home from the shops – just make your own from this absolutely delicious recipe.

What you will need is:

  • 3 crunchie bars
  • 3 egg whites
  • 75g caster sugar
  • 425ml cream.

Break Crunchie bars coarsely in a plastic bag using a rolling pin. In a large bowl whip cream to a soft peak. Whisk the egg whites in another large clean bowl with electric whisk until very stiff. Add sugar, 1 tsp at a time, whisking between each spoon. Add softly whipped cream and crunchies using a metal spoon, mixing thoroughly but gently. Freeze in an airtight plastic container.

You could always use Maltesers, chocolate chips, mini smarties, chopped mint chocolate. If you have any other ideas let us know!

This recipe was originally given to us by Myriam O’Connor from Cork.  Its foolproof try it out.

This is only one of the recipes from our “52 Cakes & Desserts” pack of cards.
